How to make a quiz pick random questions

I'd like to know how to make sure that the quiz randomly asks only specific questions from a given list.

I also don't get how some quizzes include an answer in grey (typically "Rhine-Ruhr Region) that is given from the beginning - how can I include that as well?

If perhaps someone could give me an answer to these questions I would greatly appreciate it :)
