I went to Cartagena on a cruise ship and it was not a nice experience, first the tour guide tipped us and left us in the middle of the city where people kept harassing us to sell their merchandise. It was not a fun experience.
Canada, USA, Mexico, Haiti, Jamaica, Cayman Islands (UK), South Africa, Eswatini (then Swaziland), Senegal (just for a layover idk if that counts but I count it)
Generally, I recall Kalbahamut and some Kiwi gentleman on this site visiting lots of countries.
I've been in 24: Finland, Estonia, Denmark, Germany, Switzerland, Austria, Poland, Czechia, Slovakia, Hungary, Romania, Bulgaria, Greece, Slovenia, Croatia, Bosnia, Montenegro, Serbia, (khm... North) Macedonia, Italy, San Marino, France, Belgium, Luxembourg
Can't really rank them because I spend more time going around some of them than the others, but generally former socialist countries that entered EU and Finland are my go to.

I've wanted to do Vienna for years (and tick off a couple of countries in the process!) and hope to do it at some point this year. Also looking to do Sofia as it looks like a cool city.
