What do all of the symbols/ colours/ designs mean? I understand river, lake, city but I do not understand the rest.

The two rounded symbol is a mount. The yellow can be countries or geographical zones. The pink and orange also geographical zones. And the blue seas, lakes...

I managed to get Ouagadougou (without ever studying for the capitals quiz, mind you) but somehow missed Ottawa. Whoops
