1. No fast travel available for the first half of the game
After beating Ornstein & Smough in DS1, a daughter of Gwyn gives you the Lordvessel, enabling fast travel.

2. You can choose who your very first boss will be
Iudex Gundyr and Asylum Demon are both unskippable. However in DS2, you can first fight The Rotten, Last Giant, Dragonrider etc.

3. You can become a certain boss, or fight other players who are that boss
in DS3's Ringed City expansion, you can join a covenant that summons you as a boss called Halflight, Spear of the Church.

This is called a focus bar, and is only in DS3, as are weapon arts which consume focus points.

You can kindle bonfires in DS1 so they give you more Estus. In the other games, you find Estus Shards which are permanent upgrades.

7. The hub is disconnected from the rest of the game
DS3's Firelink Shrine has to be fast traveled in and out of. DS1's Firelink and DS2's Majula are in the game world itself.

Various bosses in DS1 such as Bell Gargoyles and Gaping Dragons have tails that can be cut and grant unique weapons.

An NPC in DS2 named Benhart of Jugo weilds the Bluemoon Greatsword, though the game also has the original MLGS.

Anri of Astora in DS3 is always the opposite of whatever gender your character is. There's a questline where you "marry" them.

The Dark Wood Grain Ring from DS1 lets you do this, though you have to be below a certain equip load threshold for it to work.
