While I do agree with everything you said, I have my own arguments as well.
First of all, I put Belfast in the grid not because of its connection with St. Patrick's Day but rather because of its connection with Irish culture. I realize that St. Patrick's Day is the theme of this puzzle, but I named it that because I had planned to release it on St. Patrick's Day. My intention was to make this puzzle about Irish culture.
Secondly, I spelled "whisky" the way I did because that's the way the Canadian variety is spelled as well, and I'm from Canada. I agree that it should be spelled the other way but I do not wish to change it now that St. Patrick's Day has passed and ruin the secret message. I apologize.
Thirdly, yes, I wanted to include more words, but there were all these annoying messages JetPunk kept giving me about including more words and grid density and stuff. I apologize for that as well.
Also, Whiskey from Ireland is spelt with an "e", the other one is the Scottish variety.
And I'm a little disappointed that Guinness isn't mentioned, although that may not have fit in the grid.
Not too bad of a puzzle overall though. Sorry for the negatives.
