For yes, the correct word is only "haan". Ji (and not G) is used only for respect. When someone asks aapne kha liya? (tr. Have you eaten?), I would reply to elders as "ji haan" and to someone younger than me with just "haan". Ji has no literal translation to English but the correct answer should be only haan.

For goodbye, khuda haafiz sounds a bit too religious. Only the most religious Urdu speakers would say it. The proper word is "alvida". In Hindi, we also say "vidaai" to mean farewell or to part away.

Mausam-e-Sarmaa also sounds way too Persian. Urdu has a simple one word for winter as "sardi".

I am not sure with the Urdu spellings but the English ones I've written above are correct.
