Yes it is! Palestine is recognised by most (135 out of 196) of the world's countries, not far short of the 160 that recognise Israel, and way more than recognise Kosovo (109) or Taiwan (22, although to be fair, far more recognise Taiwan in an unofficial way to appease China). Palestine's status at the UN is similar to that of Vatican City and, until 1992, Switzerland.

As there are so many varying definitions of what constitutes a country or state, does it not demonstrate that these entities are entirely fictitious? If we can’t even agree what makes them “real” then how “real” are they? They just seem to be stories we tell each other, believing or disbelieving according to our own tastes. In particular, there is no such thing as an American child, or a Muslim child or a Communist child - merely empty vessels waiting to be filled. With more stories!

Having said all that, for the purposes of JetPunk quizzes, can we have some consistency please…

I would't say it makes them entirely fictitious, just that they're open to debate. Nationhood isn't a black-and-white issue. Recognition of that is demonstrated by the Countries 197 to 205 and Countries 206 to 242 quizzes. The only real and true consistency you'd get is if you managed consistency across all websites - consistency within a single website doesn't really prove anything, especially if it is this website that ends up being a "wrong" one!
