I tried to have a balance of simpler and challenging flags but it might have skewed more to the challenging side.
As for the gray, there is a caveat in the quiz description specifically for that and for the light mode I would say it is alright. I'll see to make it grayer for dark mode.
Fantastic stuff. My score wasn't very good, but I had a great time colouring in the flags; trying deliberately wrong colours yields some pretty fun results as well.
That one is long due, I don't think one can really say they know their flags without being able to recall how they precisely are arranged, on top of identifying them.
Also, I got Canada wrong because it wasn't obvious to me that it wasn't white already. Maybe the "uncoloured" colour can be a lot greyer?

I would suggest creating several quizzes with different difficulty level.
Only suggestion: I agree with baptistegorce about the quiz that could be split into 2 with different difficulty level.
