Mighty interesting the difference between sweetbread’s obvious sounding name and the fact it refers to the pancreas. Kind of like how Yamaha could refer to a piano or a boat engine - two super different things
Matzo is not bread. That is literally why Jews eat it during Passover. Because it's yeast-less. I don't think you can count it as bread if it doesn't have yeast.
It's an unleavened flatbread, which is included as per the caveat. Lots of bread is unleavened i.e. doesn't use yeast or another raising agent. Check the intro to the bread wikipedia page for more info.
Sweetbread is a culinary name for the thymus or pancreas, typically from calf or lamb.
