When I visited Fes in Morocco, they said the university there was founded in 859.

Yes, the universities in Fez (Qarawīyīn University) and Cairo (al-Azhar) are older (az-Zitūna is even older). Al-Azhar predates Bologna by 120 years, and Bologna was based to a great extent on the model of the Islamic university. I don't think there's any real dispute over that. The universities you list are definitely the earliest in Europe, but not the world.
